Go to "Guides" on the menu and click "Make a new guide template" then save your Guide as "My Passage Guide" or "My Exegetical Guide" and it will become the default guide for you.

Other nonsense? That always seem to appear in the most unlikely places. However, there are two ways to remove the rest:

on the passage guide there is an "Add" control which will also permit you to hide elements you're not interested in
under guides there is an option to create custom guides with only the sections you request. If you name your guide "My Passage Guide" it will become the default.
