I know there is a way to copy scripture texts to a Word document but is there a way to copy commentary quotes or sections to another document?

You should be able to select the portion of text you are interested in, copy it (Ctrl/Cmd-C) and then paste it into another document.
If you want to keep this in a document in Logos have a look at Clippings - http://wiki.logos.com/Clippings
