Trying to setup to several studies: "origin of evil or evil", "original sin" and "Christology", what is the best way setup the searches to isolate these?
Open to other approaches as well.
For evil and original sin I would start with the factbook. For Christology I would run the factbook combined with a search of my theology collection (if you have one). For the search of the theology collection restrict it to Heading and Large text.

I am not sure I understand your question. If you are talking about finding something in the Factbook, simply open the Factbook and type what you are looking for (e.g. evil, Christology, etc.)
For a Basic search like i referred to in response to the OP
Open a search pane
Select Basic
Click where it says all text and select the Heading text and Large text fields
Click on entire library and your theology collection (if you have created one)
