Myself and a friend just discovered that if you highlight a single word on the iPad, tapping the word does not bring up the highlighting context panel which you would normally use to delete (or change the color of) the highlight. It works for more than two words, but not when a single word is highlighted. We were working in Holmes' Greek text.
To resolve the issue you need to extend the highlight To include more than one word.
