Which fonts does the Personal Book Builder accept?

It accepts basically any font. But you should compile a small part of your intended book with a number of fonts to see how they work.

Basically any it can work with (which would be UNICODE fonts - if by chance you have decades-old non-Unicode fonts for Greek and Hebrew, they probably won't work).
Note that the PB compiler may log warnings if you're using fonts that are installed on your computer but not part of Logos (such as Cambria), but they will work nevertheless.
However, in order to use the Logos functionality to its full extent, you should simply use Times New Roman 12pt - the PB compiler will interpret this as "standard" or "default" and when displaying the PB will replace it with the then-current resource font you instructed Logos to use for all resources via the program settings. Thus your PB will look like any other Logos resource.
