Logos Greek keyboard hijacking my laptop

I installed this on my HP laptop. It keeps defaulting to Greek every few minutes so I decided to try and uninstall it. But I can't because it says it "is the current default keyboard." However, Windows 11 settings are all English default, so it is not an issue of the windows settings being incorrect. i've already asked Logos and they say they cannot help me. Has this happened to anyone else and how did you solve this issue?

    Do you mean it does this within Logos or in every app on your laptop?
