Notes tool - changing default color and highlight

Hi everyone,
I use and color and highlight in my Notes, but currently it is tedious because the default color is Black and the default highlight is also Black. Please see the two icons I'm referring to below.
Therefore I always have to hit the down arrow key and then select the color. Black is the most useless default anyone could ask for because the lettering is always in Black. So I don't see how default being Black can ever be useful.
If there is no way to change the default, is there a way for the program to use the latest choice (like in Word/Excel etc.). Thus, if I had used RED color previously, the next time I highlight something and hit the Icon, I want my highlighted lettering to become RED.
Thank you always for your help, my dear Forumites.

This is the way it works for me - I'm surprised you are seeing different behaviour.
What platform are you seeing this on?

Wow, that would be great if it is true, but I've never been able to make it work. My system is Windows 11 Home.
Let's say, I highlight a sentence and then use RED color. see example below.
You can see the RED, so it sounds promising. But the moment you highlight another set of words, it goes back to Black default. It will be great if it stays at RED. Maybe, there's a trick to doing that.
Thanks Graham.

But the moment you highlight another set of words, it goes back to Black default.
Do you mean that something you have highlighted and appears red turns to black when you highlight something else?
If so, that is certainly unexpected behaviour
But I may be misunderstanding what you are saying
Is it possible for you to record a short video showing what you are describing and posting it in a reply to this thread?

I think he means that after using Red to highlight some words, you have to select Red again the next time you want to highlight some more words. Unlike MS Word, where the editor remembers the last font/highlight color you used in the current session, the Notes editor does. If you're doing 10 different highlights in the same note in as many minutes, you have to select your desired color every single time.
