I would like to set up different default bibles for OT and NT. Specifically I want to use the Jewish Tanakh for the OT and either NKJV or ESV for the NT. How do I do that? I'm sure there's a way

You can do this through the use of advanced prioritization in the library. Are you familiar with prioritization?

Alan - Here is a screen shot. I just checked this out quickly to see how it would work.
You will want something like the screen shot below. In this case, anytime you were to hover over and OT passage, it would show the ESV text. Anytime a NT is hovered over, the NCV is used.
In your case, you would want to put the Jewish Tanakh as your #1 prioritized resource and then add the advanced prioritization feature to it. The ESV would be #2 (where the NCV is in my screen shot).
I have BHS 4.2 and NA27 prioritized. Since neither has what the other has, I don't need to do anything further. When I want an English version for these, I generally open the JPS Tanak which automatically opens with BHS 4.2 then I link the two as "A." I open the NRSV, which seems to know to open to the NA27, and link them as "B."

Alan- what George and Dave have said here really gets to the heart of YOUR situation. Advanced prioritazation isn't really needed. As Dave has said, putting the Tanakh first and ESV second, your OT pop ups will show the Tanakh; your NT pop ups the ESV. If you wanted to use two translations which had BOTH the OT & NT, you would need the advanced settings.

I really need to get into prioritization, looks like you can do some pretty amazing things. So for instance you can make a commentary on James be the priority for the book of James?
Yes. Just make it your highest prioritised commentary. That way, your other commentaries can line up below it for the rest of the bible books!
If it is a book in a Series then prioritise like:-
BLC Commentary | 12 volumes
....
...
(first do the advanced prioritisation on James, then add the second one for the rest of the Series).
