It's best to read McDonald first, to get an idea of the terminology used in the debate and the confusion about the definition of terms like 'canon' and 'scripture'. McDonalds gives a clear overview of how the term canon is used and gives a useful discussion about how he understands the term canon. I find his distinction between canon 1 and canon 2 very useful.

Logos really needs to get on the ball with building a relationship with Oxford University Press (who published that first one), as they've got lots of good stuff. The second one is by IVP Academic so it should be something Logos ought to be able to get, and hopefully sooner rather than later.
Simple and to the point on the New Testament: Encountering the New Testament: A Historical and Theological Survey (The introductory article is awesome) and How We Got the New Testament: Text, Transmission, Translation by Stanley E. Porter (The whole thing was a delight to read and very informative). Both works are from Baker Academic.
For the Old Testament: Encountering the Old Testament: A Christian Survey has a great introductory article on how we got the Old Testament.
