This just started happening out of nowhere. EVERY single book I open, visual filters turns on and then I have to turn them off. How can I keep them OFF?

Have you tried clicked on the drop-down menu to the right of each visual filter? There's a "do not show in any resources" option:
Note: you have to hover your mouse pointer over the visual filter to get the drop-down arrow to appear.
