This is great, but it would have been even better to have an option to remove paragraph divisions too for a more authentic manuscript experience.

Bradley, I believe he is referring to "Manuscript Study" which is a form of study that uses bible text with no chapter/verse/paragraph/etc. As an Intervarsity member, I recall such studies (http://www.intervarsity.org/bible-studies/manuscripts).

I think we need to be realists sometimes and understand why these people (who were just human) did what they did. Why did the original copyists squeeze/remove spaces between words? Most likely not for any holy, spiritual, obscure reason other than the fact that papyrus was not cheap. Would they have preferred spaces between words? onewouldthinkso.

I can't see any changes in the ESV when I select this option. The Logos 6 Help doesn't give an further info - could you advise what this option shows.

That option will toggle the visibility of formatting such as, the words of Christ in red, small caps display of Lord, italics, and possibly others. Not all Bibles have all of these kinds of features.
Does anybody know if this will work with the Greek and Hebrew Bibles as well? This is a great feature. Also, is it a possibility that we will see this on mobile?

Yes, this should work in Greek and Hebrew Bibles. Note that Bibles need to be updated in order to get all the features, so some of the options may not be available in all Greek and Hebrew Bibles right away.
