New to Logos and trying to copy a definition from the Exegetical Guide into my sermon notes, but I can't seem to copy the text??

I'm not sure what exactly you mean with "a definition" in this context - maybe you could post a screenshot (save as jpg or png file and attach with the forum editor's paperclip icon to your reply) so we can see what is before you?

I have a definition of the word doulos in the Exegetical Guide pane which says, 'Sense: slave - a person who is...'
It can't be highlighted to copy and paste it elsewhere.

Yes, this is a shortcoming of the Guides. You can't select text or copy from them. (It's one of the reasons why my feature request Copy from anywhere has not been marked complete.) I do not know whether Faithlife ever intends to implement this ability. They've said it would be quite difficult.
The best alternative, for now, is to right click on the word doulos (in Greek, not the transliteration), then choose Power Lookup. The Power Lookup pane will open up to the right, where you'll see a bunch of different definitions, from your various lexicons. Pick one that you like (the closest to the one you saw in the Exegetical Guide), right click on it, and then Copy.

It's a shame you can't just copy from anywhere. I hope this doesn't become a point of frustration in the future. We shouldn't have to type out definitions, or anything for that matter.

Another option if you want the exact text from the Exegetical Guide window is to use screen capture OCR software. You can select a rectangle around the text you want to copy and let it go to town. I use ABBYY Screenshot Reader, which is pretty accurate. It even does foreign languages, so it should do OK with the Greek text at least. Not sure about Hebrew. It costs about $30.00, and I use it all the time, so I find it to be well worth the price.
Of course we shouldn't have to do clunky workarounds like this. Logos should let us copy and paste from anywhere. How 'bout it, Faithlife?
One more thing. I just realized that Logos has partially implemented the "copy from guides" feature. You can right-click on the section heading of pretty much any section in a guide (so in this case, it would be the Word By Word section of the Exegetical Guide) and select Copy from the menu that pops up. That will copy way too much text for what you want, but at least you can delete the parts of it you don't want and you'll be left with the exact text of the definition.
I still think this is pretty lame, and I've updated my request on UserVoice to say they need to refine the ability to copy text from guides by letting us select any text we want and right-click on it and copy it.
Rosie, you're right - and copying the whole Word By Word section, even if restricted to nouns in the settings, is an inadequate workaround - but in this current context it's not applicable: the definition comes from BSL (Armen: just click the blue colored word slave after Sense and it will be opened) which allows copying when right-clicking the definition:
slave n. — a person who is legally owned by someone else and whose entire livelihood and purpose was determined by their master.
