Does anyone have any recommendations how to match a Hebrew word to a Greek word? For example, I'd like to research the word Prevail in the flood account and the word Prevail when Jesus said the gates of Hell will not prevail against...
There are several ways to review this. I like to check the Hebrew lemma in the Lexham Analytical Lexicon of the Hebrew Bible and look for the section showing Greek equivalents. What this does it show what Greek lemma is used in Gen 7:19 for the Hebrew lemma translated prevail. You can then compare that with the Greek lemma used in Mat 16.18 for prevail. It is not the same Greek word.
I would probably consult The Parallel Aligned Hebrew-Aramaic and Greek Texts of Jewish Scripture by Emanuel Tov.

But both passages have the base of ancient gods ... Yam, and then Hades. No one escaped the clutches of Hades (until Jesus).

Actually I would like to see it reading from top to bottom, Hebrew and Greek side by side. that would alleviate the problem with the reading directions.
If you run a BWS on that word and just restrict the passage range to Gen 7:19 you can see what Greek word is used in the LXX
The lexicon referenced above shows this as well in the Greek alignments section
If you right-click on the Greek term in the lexicon you can run a BWS on it to see where else it appears in the LXX and in the NT (although in this case it doesn't)
