Hi,
I installed the newest beta and suddenly my right-click menu is gone weird on my Mac.
I can no longer add a note to a reference. What happened here?
Same on Windows 10. I've had to add the note to a selection, add an anchor to the reference, then delete the note on the selection.
Is there an easy way to go back to the previous beta?

No - it would probably involve a complete reinstall
And this problem is strange - there is nothing in the release notes that talks about any changes to Notes.

Yes, it is strange. I noticed the same: There is no comment in the release notes about any modification to Notes.
Is the previous Beta somewhere available for download?

This is the first beta release of this cycle so you would need to go back to the last stable version - and that would probably involve a complete deletion and reinstallation.
Thanks, Graham. Does this mean I have to redownload all settings, collections, resources, notes,....?
Yes, it looks like a downgrade is not possible:
https://community.logos.com/forums/t/52967.aspx states: Logos Betas cannot be downgraded to a stable release. You will need to uninstall, delete all Logos folders, then reinstall the stable release if you no longer wish to run a Logos Beta.
I guess I just have to wait until FL fixes this. In the meantime, I have to use the workaround suggested above by Leigh.

Thanks, I've created a bug report and made the team aware of it.

This has been fixed in 9.3 Beta 2.
