how can i set up in red all the thing that God in the OT and Jesus say in the NT?

The NT is easy. In the system preferences, turn "use red letters" on. The OT isn't tagged in the same way, and which words "should be red" are more debatable.

If you want the Old Testament Words of God in red bad enough you can do it manually.  Click on screen shot to enlarge.  This process is only approximate and like Alabama said which words should be red is debatable.  I only followed this process in Genesis.  You set up a visual filter just as a marker as to what words to highlight.  The search words you use will vary depending on which translation you use, I used NASB.  I show the visual filter in the ESV in the screen shot just to show what it looks like.  Then you arrow down from one filter result to the next and highlight the words of God in red manually.  Then you turn off the visual filter and the result is as you see in the NASB in the screen shot.

It is in the Text Display section of Program Settings. Do you see it there?
