How long do deleted documents remain on your server?
I don't know but I can see documents I deleted over a year ago available to be "undeleted"
Why is there no "permament delete" option??

I have recommended they be removed within 6 months max.; reasoning that old documents could create more problems than they solve when restored and that the really urgent need is no more than a few days!
Because you are concerned about them being analyzed?
most of these are working files, from which I make a new finalised document, so they are refuse and I never want to see them again - ever
I realise the benefits of the system, but there needs to be a drop off time for recycling the space..
Things like prayer lists (when they appear) I would definitely want to purge, I may be ultra-paranoid - but at root level its my data, and I should have rights to purge it from system if I desire

but then someone may accidentically delete his/her Christmas sermon prep clipping file between the years and will realize it's gone some eleven months later... Since there are a lot of yearly things that might be connected to a deleted document (some less prominent than Christmas), a retention period of twelve months seems more reasonable to me.
Now I wonder from what OS/App I remember a command "purge all salvageable files" in the back of my head... Novell perhaps?

Indefinitely. (this may change in the future) We try to err on the side of retaining data for longer than it is necessary rather than risk deleting something important.

No.

All features are prioritized based on a wide variety of criteria—user demand, available developers, anticipated value, etc.
It's difficult to point to any one reason and say, "This is why we don't have feature X."
Thanks David, but you haven't adressed the issue of us being able to permamently remove specific data (content) from your servers if we wish, have we consented somewhere in the EULA that you can permamently keep a copy?

That sounds like how it will work - the undelete mechanism is working at the document level not looking at things within the document.
That's correct—you could even delete the last note item and delete the document, and our undelete feature would only restore the empty document.
However, it should also be noted that this doesn't necessarily mean that all of the data will be purged from our servers. We often keep old revisions of documents around in order to intelligently merge changes to a document that have been made from different devices working from different revisions of the document.
So this feature can restore whole note files that we accidentally delete, but not help us if we accidentally delete a note within a note file?

Presumably once deleted and synced though [in time] these will fall off the system too?
That should be easy to verify for yourself.
