I'd like to set up a single reading plan with multiple books -- but it looks like I can't do this... Has anyone tried doing this before?

Do you mean a single plan with multiple books of the Bible? If so, there are various approaches to doing this?
Or do you mean a single plan with multiple separate books. If so, why wouldn't using multiple plans work?

I'd like to read a passage and the complimentary sections of two or three commentaries each day... What I've done right now is set up six different reading plans, Monday through Friday. Monday has the Scripture section, and Tuesday through Saturday five different commentaries -- but there's no way to regulate things so the commentary sections are specifically about that Scripture section, nor to choose "by chapter," or anything like that, to make things "pull together."
What I have will do for now, I guess, but the reading plans could use a little more feature set, I think.

What you could do as a workround is set up a single plan just for the Bible and have it so that you read one passage every Monday.
But don't use the Reading Plan from the homepage to initiate it, simply create a layout which has your Bible and the five different commentaries linked to it.
Use the fact that you can see Reading Plan indicators in the text - it is enabled via a visual filter as below:
