The issue of Read Aloud incorrectly switching the speaker voice will be fixed in 5.1 Beta 7 for beta users, and in general when 5.1 ships to the stable channel. Due to this fix, the Greek words in English resources will be skipped since the English voices provided by Apple cannot read the Greek appropriately. On Windows, the Greek text is not skipped

This behavior is by design. The display of this information is under review, to try to make the differences less confusing. The behavior of these sections was explained to me this way: Example Uses: This section is garnered from the Grammatical Relationship data; specifically the "verses" view. Development has determined that this behavior is by design. Clearing the short title removes any customization, and resets the short title back to the Logos default. The workaround, as you have already discovered, is to rename the Favorite after you create it.
