I notice in my available courses are ones by Graham Criddle and Joel L. Watts. Are we now able to create our own courses? If so, how? And do we have to share them?

Not yet. Others have asked for it, and it's on FL's list of improvements to the Courses tool.
Users are able to create Reading List content, and some reading lists have already been converted into Course tool plans. FL has mentioned that we will see more reading lists converted in the future.

PetahChristian is right, the ability to create one's own courses is on our list of improvements, but we're not there yet. Joel and Graham have created some custom plans for us, but the ability for users at large to create their own plans in the Courses tool is still a ways off.
