I realize this is a hard questlion to answer as each service will be various sizes but how large of a download (on average) is a service? I am thinking of tethering my iPhone to update the service.... Looking for a general idea. Thanks.

This is completely dependent on what type of backgrounds and how many items you have in your presentation, so the size can vary greatly. However, I looked at your presentations and used the 'Back up presentation' tool to get an idea of the average size of your presentations and it looks like yours are around 80 MB in size.
Like you guessed... it's complicated.
Spencer's estimate is really a worst case. When we backup a presentation we have to include all the presentation data including images and videos for both aspect ratios.
In normal use case we only download the content we need (current aspect ratio) and we always cache the images and videos. The presentation data (text, style information, etc.) is actually quite small, usually less than 1 mb. Therefore, if you frequently use the same backgrounds and videos you won't be downloading much data each week.
It is worth noting that running Proclaim on the church machine will always sync down all presentation changes but will only download the images and video for the currently open presentation.
