The wiki is a user generated guide... so users must first generate it.
I was hoping for something more substantial than the short videos that logos supplied. Hopefully some real world example.

I would like to use the concordance on a non-Bible book, for example Moody book of theology. What's the quickest way find a topic I'm looking for and what are the Best checkboxes to check in uncheck. Also any other help you can give me

There is no "right" answer as it depends upon what precisely you are looking for and the use to which you want to put it. However, I would start with the three headings's boxes checked - combine all word forms, omit common stop words and omit numbers. Then select headings under fields.
In the book I am using, it appears to make sense to look for topics in the surface text as well so I'd click on the X by Field: Heading text at the top of the list and look at all the text - I'd sort by Heading rather than the default Count so that I could find specific words:
I might then decide that nothing mentioned less than ten times is really discussed and that any word used more than a 1000 times is too common to help me find topics. That gives me
