How can I confirm my update channel is set to Beta? When I run "set update channel to beta" in the command box, nothing happens. Is that normal? Thought I would at least get some movement, processing, or a confirmation.

In Logos, go to Help (the question mark) | About Logos Bible Software
In the top left look for something like this:
Thanks! Its actually not under the ? for me (maybe because I am on Mac??), but your advice prompted me to look under the main Logos Bible Software menu under the application menu in the menu bar. Here I was able to find "About Logos Bible Software" as you were suggesting, and indeed, it is in fact set to Beta. Thanks for your quick reply.
Note that having your update channel set to beta will not install 6.9 Beta 1 automatically; see https://community.logos.com/forums/t/120685.aspx

In all seriousness... make sure you read and heed the warnings. You should NOT run beta on a "production" machine. If you need Logos on a computer, stay away.
