when I use a song from song select in proclaim and make adjustments to the font, etc does it not save those? Do I need to make those adjustments every time?

Changes to a song service item are specific to that unique service item. Changes do not transfer to other songs automatically, and they do not transfer to that same song if you use the song again by way of the Song item finder box (where you type the name of the title of the song you're looking for).
The only time the style changes will be reflected in the service item is if you make changes to the song, and later, in a new service (or that same service), find the service item you made changes to in Open>Reuse Items. The Service item will reflect whatever changes were last made to it. To make service items you've formatted easier to find you can change the service item title by right-clicking it in the Service Order on the right and choosing "rename item." The provide identification reflecting the changes you've made.
