Is it just me or is "undo" not an option? If I accidentally deleted a slide, a textbox, etc... I can't undo that and the "undo" looking button makes things worse... it resets customisation.. further messing things up
We do have undo and redo! You can use the normal keyboard shortcuts like CMD+z or control+z on Windows or find it in the right click context menu
But the thing that gets you is it matters where the keyboard focus it. The easiest way is to right click and hit undo. So if you have to undo a textual change, right click on the text box and hit undo.
If you want to undo a change to the positions of the items or the font change or the color, right click on the slide and hit undo.
If you want to undo the Deletion of a service item or the addition of one, right click on a service item in the order of service and hit undo.

Not very intuitive though - never heard of a contextual undo option before.
Last week using the logos app on my smart phone I accidentally deleted a part of a note. I couldn't figure out how to undo it. I haven't added any notes since then. Is there a way to restore the section of that note that was deleted accidentally?

In general, I think it's a "keyboard capability" issue.
For example, I can't see a way of restoring a portion of a deleted note on my iPhone but I can on my iPad (in the same mobile app) by using Cmd-Z on my keyboard.
But I think you are asking, more specifically, if someone in Customer Services could restore the missing text. And that would be something you would need to contact Customer Services about directly - contact details at https://www.logos.com/contact-support
