What resources would you recommend to give background and commentary on these?

Not sure what scriptures are in NH ... I assume you mean quotes/allusions?

Looking for something less technical. More along the lines of:
1. History of the NH. Excavation.
2. Brief description of each writing
3. Commentary if available.
Something along these lines.

Ok ... you're title is referring to the most recent translations.
Well, it's not like you have a choice (in Logos). There's Robinson's NH Library in English. I made a screen copy below, to illustrate what you're up against ... copying and translations. Most discussion/commentary are fragments in journals and monographs.
In Robinson, each has an intro, mainly technical. No commentary. And no discussion of archeology, etc. Anchor would be better.
Another mix, you'll find in 'NT Apocrypha' and discussed:

In the volume Jesus in NH writings, there's a good discussion of the overlap (copy below Robinson).
