How do I get the app to STOP selecting an entire sentence/heading and blocking half of my phone's screen with a pop-up I have no interest in every time my thumb touches the text on the screen without managing to flip the page?
There is not a way to turn off text selection, though we will consider adding in an option if there is sufficient demand.
I'm not sure if this is a part of the struggles you are finding with the new text selection, but if you are trying to bring up the top and bottom toolbars, but instead keep getting the selection menu, you can:
Count me as one vote. I much preferred how text selection worked in 9.
By releasing your finger from the screen when scrolling. I.e. if your finger is on the screen while scrolling, the nav bars will not show, but if you scroll and release your finger, the nav bars will show.
As I hinted at with my reference to flipping pages, I don't scroll in the mobile app; I have disabled that option. So, I guess, touches that for scrollers cause no problems do cause me problems. Do most of the designers of the app scroll when doing their own reading? Perhaps if my eyes had an easier time with the scroll view I would have a more positive experience of trying to read on 10 mobile. Right now I prefer the previous generation of the app.

And it's naively designed. Looks for a period, no matter. Then, gets lost in a long sentence, finally rolling to a halt at page end. Ok, stops 1 char short. But actually not. It kept going, like an Eveready Bunny.
I cannot understand the reasoning behind the new text selection. Could you explain why this is a feature and not a bug?
This new way to select text don‘t seem to be superior and requires the titlebar in fullscreen (when scrolling is off), which is a high cost.
