It would be nice if there was a way to underline in the contents panels and if the italics were more exaggerated

Underlining is available in the content view, though there is no button for it. Highlight the text you wish to underline and hit "Command-u" on the Mac or "Control-u" on Windows.
I believe the appearance of the italics glyphs is dependent upon the font chosen. You might look for a different font with a more pronounced italicization:
A list of fonts will then appear, allowing you to apply different ones to your current slide to see how they look.
