Testing without going "On Air" and adding songs on the fly

Hello, as a church we are considering new presentation software. Several of us use Logos, so Proclaim would be a natural fit. I have a few reservations/questions before I make my suggestion to the rest of the leadership.
1) How much can we test the program without going "On Air?" Another way of asking this may be, is there a way to make "fake services," for practice or training? All of our multi-media people are volunteers and we don't want to make this more difficult than it has to be. I think we want to try it out before we use it in an actual service.
2) Is there a good way to add songs "on the fly?" Sometimes we have services with more open ended singing. The worship leader may change/add songs mid set as the Spirit leads. Our multi-media person needs to be able to change accordingly with minimal difficulty. How flexible is the program?
I like what I see with the program so far, but these will probably be asked of me, so I want to be ready with an educated answer.
