Is there any way to re-size the widget? I am using it on my webpage and want to make it 375px by 259px.

Not currently, no.  You can however add an image tag with a src of http://biblia.com/verseoftheday/fullsize.jpg, i.e. the full-res widescreen VotD image and style it however you need to.  If you do that, do please have it link back to http://biblia.com/verseoftheday.  Example:
