Yes you can! I used my christmas credits to buy the cross grade.
credits can be used for products that are live. i dont think they are available for prepub or cp products

Does a person gain Christmas credit when purchasing an upgrade to L5 versus buying it as one's first Logos base package? If so, I wonder if it would be intelligent to return L5 and repurchase my upgrade during the Christmas promo. Might be more hassle than its worth though.

Ironically, I got 30% off on my L5 purchase, and my price range when I bought it fell within last years Christmas promo 30% off range. Lol, so nevermind I guess. Could still be an idea to play around with for those who got less off and spent more than I did though.

Christmas Credit was a 2011 sales promotion. It has not been announced for 2012—indeed, it may not exist this year.
So your answer is No, you cannot gain Christmas Credit for an upgrade.
