I would like to add "crawl text" but just to a few slides. When ever I add a crawl text though it applies it to all slides. Is there a way to control this?

I don't think you can do this - and this is by design.
The 'Crawl Text' is there, not for pre-planning but for emergencies etc.
Something like 'Will Jane go to the nursery', or 'The Pastor has left the pulpit due to a fire in the basement - the projection team are leaving now - how has this message affected your life?'.
It would be better to do what you want with an animation built into the slide or by making a video.
