I use to be able to go into the customization screen to add names to title slides, but every time I attempt to add a customization by the new method and it is not allowing me to add anything.
What do you mean by adding customizations? Is your problem similar to the one in this post: http://community.logos.com/forums/t/84446.aspx

We published a new version of Proclaim for Mac which fixes a bug which prevented the ability to add Text Fields to Service Items. This should solve your problem. Let us know if you have any further issues.
