On a Mac, if you press Command L you will get the Proclaim splash screen to allow you to fix something. But I'd like to replace that with our church logo or an announcement etc. Is there a way to change it?

See the attached screenshot. If you hover over the logo image while a presentation is on air, you can click on the 'change' link that pops up on the lower right. From there you can set whatever image you'd like to appear when you press CMD + L. The image you set will replace the Proclaim logo for all of your presentations.
