I am looking to purchase one of these and I wanted to know, do either of these or both of these work on an iPhone the same way as desktop?

Not in exactly the same way butt you can navigate from the text to the apparatus by tapping the link in the text
This is on my iPad but it would be similar on iPhone thought the smaller screensize could make it difficult to use effectively

On the mobiles, no.
On the desktop, if you're lucky, you can hook a Cited By panel to a Church Fathers series, that periodically footnotes which passage is being used. But it's very arguable.
You might also look at Graham's screen copies for apparatus. NA28 has active-popups to identify more about the mss number ... library and more importantly, century and dependence. UBS5 doesn't, other than to narrow down coptic, etc. So, with UBS, you need to know your mss's.

The desktop 'Cited By' tool is a handy way to tie a Bible (or apparatus or commentary) to another resouce that cites a verse you're studying. The power is especially useful, where the other resource isn't arranged by verse.
Your query mentioned the fathers, which are arranged by author, and writing. But if the fathers resource cites an associated verse, the CitedBy will quickly match the father's use, to the verse you're studying. In my layout, I use 3-4 CitedBy panels to match up hebrew massorah, the fathers, NT apocrypha, the jewish Talmud, etc Very powerful.
My comment on 'arguable' is that fathers usage is heavily discussed in terms of varients. Is it a quote or poor memory?

EDIT: I wrote this before seeing that Denise posted a response. The following was written before I realized Denise's helpful response was posted:
I think what Denise means is that it can be done on the Desktop version. Open up the "Cited By" panel and add a query that searches whatever collection you have of the Church Fathers. However, it may not necessarily be the case that every Scripture reference in your Church Fathers collection is footnoted (it may not be noted at all). This "cited by" search will work for all bible versions, not just the GNT.
What's the purpose of purchasing the NA28 or UBS5? Is it just to have the latest text-critical version of the Greek New Testament? Or do you want to have a good amount of textual variant information? If the former, then the UBS5 is sufficient. If the later, you need the NA28.
