i would like to be able to rename prayer lists, and move prayers from one list to another. Are these capabilities that I just haven’t found, or is their some abstruse trick to it, or am I just stuck with what I’ve got?

You can do this clicking on the name and overtyping it
and move prayers from one list to another
I don't believe there is any mechanism to do this
