For example, if I search for “eternal life” in the ESV, I get a list of verses. Unfortunately, I can’t copy them onto a Word document. Same problem with the results of a scan with the Reference Scanner.
Is there something I’m missing?

Scott, try clicking the column of 3 vertical dots at the upper right corner of your search window. That will give you a pop-up window that will include the option to print or export. You can then export your results directly to a Word document:
