I simply want to link a particular resource with a particular dictionary or lexicon. For example, I now have my Latin resources linked to the Lewis and Short, but if I want to change that to the OLD for one particular resource (say Nepos). So far I can find nothing which explains how to do this.

The magic words you are looking for are "advanced prioritization" see https://wiki.logos.com/Prioritizing

Orthodox Bishop Alfeyev: "To be a theologian means to have experience of a personal encounter with God through prayer and worship."; Orthodox proverb: "We know where the Church is, we do not know where it is not."

Specifically, https://wiki.logos.com/Prioritizing#Advanced_Prioritization and look at Example 2.

If you already prioritized OLD (the lexicon) change that to an Advanced Prioiritization, and re-position it before all other Latin lexicons. If you want OLD to be used from other resources, then re-prioritize OLD amongst your other Latin lexicons (after the Adavnced Prioritization for OLD).

I'll illustrate using the NET bible instead of a lexicon:

I've restricted the NET Bible to be used from the NET Bible First Edition Notes, and positioned it before my other bibles. So ESV is my #1 bible, followed by NABRE, then LEB. I've also allowed the NET bible to be used from other resources, but it is #4 - this is optional.
