When you open a new bibliography it comes with a default title: untitled bibliography which I would like to read "Quotation and Study Sources"

When you open a new bibliography it comes with a default title: untitled bibliography which I would like to read "Quotation and Study Sources"

Select inside default title. This will now allow you to type your choice for and edited title.
