Is there an easy way for me to know, as I look at my library in Logos, if a resource is a one volume commentary vs multiple volumes?
Not really. I personally tag all bible commentaries and thus use a specific tag (#99, #nt and #ot) for those.

It probably won't be in a series, but many single commentaries are not either.

This was going to be my suggestion as well. He's done an excellent job identifying these commentaries.
I think it's probably a good idea to make a favorite one volume commentary a top priority volume and have it in your passage study layout. I am a big fan of the Moody Bible Commentary as a goto reference work. I recall Morris Proctor mentioning this idea way back as a good quick study approach. If you get your mind around what a passage is talking about, you are halfway there.
Under Subjects look for Bible--Commentaries. More specific volumes have something like Bible.N.T.Acts--Commentaries
Or filter Library with type:bible-commentary subj:Bible-Commentaries
