I work with two 27in monitors - that allows 4 x A4 pages to be worked on at the same time. I usually have the pages set at 125% zoom and the screen resolution to 2560 x 1440

Mike is right - two (or more) monitors is preferred. I use one for LOGOS (and other un-named Bible Software) and one for writing, note taking, web surfing, etc.
Paul, I only use one monitor so that's my perspective. That said, it all depends on what you are trying to accomplish. If you only ever open a couple of resources and your layouts are simple, get a single monitor with the best dot pitch you can afford. Higher pixel counts will produce a much more readable image.
If your display adapter will handle it, a 4K display would be really nice to use. You'd have to scale up your text size, but it should look great.
If you long for 2 monitors, you can just go with two HD monitors for about the same price as one 4K one.
As Mark Smith said, it'll depend on your preferences and the options available to you. For my purposes, I think that Mike's setup would be optimal. I connect my surface 3 to a single Dell E2715H 27" IPS LED Monitor (1080p). The colors and lighting are good, and the price was right; otherwise, I definitely wouldn't want to go any lower than 1080p at 27 inches, which, depending on the quality of the display, will be too low for some. Higher resolutions would be desirable and, I expect, are becoming more affordable.
Like Mike, I find it a real boon to be able to open two full-size documents, such as PDFs, next to each other on the same screen. I keep my Logos layouts pretty simple, often using, on my 27-inch monitor, two wide columns and a third narrow one for the information tool and a small row for my textual apparatus. A 27-inch display leaves a lot of room for resources and visual filters that use a lot of vertical (or horizontal) space (e.g., the Lexham Discourse Hebrew and Greek New Testament Bibles). I agree, since I also use twin 19-inch monitors. Buy the biggest monitors you can afford. You (and your optometrist) will be glad you did.
I have two monitors and like it very much, for example I often keep the library window or the web browser in the other window while Logos main screen is in the main window.
My monitors are different sizes, and based on my experience, I recommend two similar monitors, please don't do what I did!
FWIW, I just got a new 4k (high-resolution) today. I'm loving the room I have in Logos especially, but I'm still getting used to the small type on screen.
As much as I like this monitor, two 24" screens would be nice as well.

Have you reset the default type size or do you want to keep the small type?
You probably would want to do that at the OS level, but you can do it universally in Logos (Program Settings) or rescale each resource individually.

Paul, I think that starting with one monitor is a wise decision. You're already making a big upgrade to a 27" IPS LED display, and you can always add a second later if you decide that would be prudent.
When you receive it, you can toggle the display settings and try different fonts (and font sizes) until you find what is most suitable for screen reading. Some common fonts that are recommended are Verdana and Charis SIL. A Google search will reveal many others. Assuming that you're using Windows, you can also see if activating "ClearType text" helps more than it hurts. (It might negatively impact markups in the Logos 6 atlas, if I recall correctly. I'd want to check again, since I'm pretty sure I have deactivated at present.) I find that Microsoft Edge, and Microsoft programs in general, render fonts much better than Chrome 64-bit. Edge, however, is still very much development. Something to keep in mind if you're ever doing extended reading.

I see that many people use 27 inch dual monitor set up. I too have a 24 inch Dual monitor setup.But I somehow can only use logos in one of the screen, the other one is may be for web reference.
I have a 34" monitor, and I love the space. I don't feel a deep need for a second monitor, but I may branch out to that eventually. Basically, the bigger, and/or the more, the better. As Veli said, if going the multi-monitor route, definitely get the same size, and preferably the same model. Whatever you can afford and fit on your desk that you can comfortably use from your chair, that's the way to go.
I had the dual monitor set up for a few years and loved it but about 20 months ago I went back to a single monitor. The larger monitor (31-32") and increasing my font size fit my needs nicely (post cataract surgery changed my vision considerably). And as David Paul mentioned, with the change in monitor size I can no longer fit a second monitor comfortably on my desk.
