Mac Mini M2 with three displays

Our church is looking to purchase a new Mac Mini M2 to use with Proclaim. Our general requirements include:
- One operator display (1080p)
- One confidence monitor (1080p)
- One main (projector) display (1080p)
- Two NDI outputs for use in our livestream.
I want to make sure that we choose the correct model, as I have heard about issues with three displays on M2 Mac Mini's. Is it possible to use a couple of usb-c to hdmi converters for the confidence and main displays while using the hdmi port for the operator display? I know that the M2pro version can handle this type of setup, but I'm not sure if the regular m2 will or not.

The M2 Pro will run three monitors, the regular M3 won’t. Also, Mini is likely getting an update to M3 in March. I believe the same holds true for the m4 vs m4 pro chip
