Is it possible to hide/display the vowels and diacritics in the Hebrew and Greek texts respectively?

No.  May I ask why you wish to do so?  A work-around may be possible.  In Hebrew the vowel points alone appear in AFAT and can be removed when copied to another document such as email or Word (with a little care).  There are Greek texts which do not have accents and breathings (Westcott & Hort comes to mind).

I use e-Sword to practice reading the Hebrew text without vowels and keep switching from Logos to E-sword to do that. I wish I could practice reading the OT and NT with and without vowels/diacritics.

I hope Logos 5 will have such a feature.
