Personally, I would love to see the Pre-Socratics; Plato; Aristotle; Descartes; Locke; Hume; Berkeley Kant; Russell e.t.c. in Logos.
+1 [Y] Yup, and Boethius, William of Ockham, Hobbes, Pascal, Spinoza, Leibniz, Rousseau, Heidegger, Wittgenstein, etc. And I've just bumped a thread where someone else requested Kierkegaard's works: http://community.logos.com/forums/t/6902.aspx. Many of these philosophers were either Christians themselves (esp., e.g., Pascal) or were in dialogue with the big questions Christians were also asking, and much theology was written in dialogue with them, so understanding them helps us understand theology.
And for a starter collection, for people who don't have time to read all the greats in philosophy, how about this pair:

This is a nice list to start with, but I hope more philosophers will follow, e.g. the pre-Socratics, Aristotle, Plotinus, κτλ.; and Maimonides, Duns Scotus, Heidegger, etc.
