I guess I missed it somehow, but I noticed today that when right clicking on the short cuts on the tool bar there is not the option to change the icon or show the label. Awesome!

I checked this out this morning and found out that whilst my right click menu looks like yours, with the greyed out 'Show Image:' option, it is still possible to change the icon by clicking on the desired one.
Here's original menu (above), below I click on the first yellow book which is highlighted.
Below you will see that my highlighting icon changed, as desired.
I then changed it back, using the same procedure.

Having posted a reply I just noticed, what is a possible typo... I believe you may have been wishing to say 'there is now the option...' not 'there is not the option..' which makes more sense..
