Hello, how do I switch a Bible from displaying verse by verse to paragraph formatting? It seems my NASB95 recently switched to verse by verse layout (or it has always been like that and I am just crazy, but I prefer the latter).

It has always been like that. (I'm not qualified to comment on your mental state ).
The format is a part of the translation--from the front matter in the NASB95: "Paragraphs are designated by bold face verse numbers or letters."
The original NASB (1977) has paragraph formatting, perhaps you were thinking of that? However, it's a separate, less-functional resource than the NASB95 (no interlinear).

I have researched this before and the NASB (at least the 1995 version, if not from the begging) has been formatted in verses, rather than in paragraphs. There is one Zondervan produced special edition, which has the text in paragraphs.
[EDIT: Wikipedia (the source of all truth) says that the original NASB was known for being formatted in verses.]

What I'm going to say won't help you for NASB95, which is always in verse-by-verse layout, but for other Bibles, if you've somehow accidentally gotten into the verse-by-verse view, turn off the "Bible text only" option on the Visual Filters menu. Having that turned on will make even the trusty NIV which is always formatted in paragraphs show verse-by-verse view:

Which shows that it probably would make sense to publish bibles by default in paragraph format in Logos, as we can display them in verses if we want, but not vice versa.
EDIT: the display option's description "bible text only" is very misleading, and should rather read "single verse display", as in "real" text-only bibles (like KS4J's ASV or modern "maximum-readability-versions") this option gives verse numbers in addition to the prior bible text. The "only" refers to taking away the publisher-provided paragraph headers, I know. Best would be a function to toggle between verse and paragraph display for all bibles.
Actually the 'Bible Text Only' also strips out the little notes too. That's a real pain when you're in the greek, the verse numbers are a painfully small as possible and re-formatting to verse-level takes out all the apparatus notes. So you make the text bigger and move on. It's Logos.
Wow, thank you all for the very thorough responses! I guess I just never really looked at the NASB95 till recently (just started with logos). Also, in my other Bible software, it is just a click of a setting to go from one-verse-per-line formatting to paragraph formatting. I must have thought I saw that in logos too.

Thank you! That was exactly what I was looking for, the ability to see the text with each verse on a new line.
If anyone is searching for how to do this in Logos 10, it is pretty similar to what Rosie posted.
1) Click the three dots - Visual Filters
2) Click the "One verse per line" box to toggle on/off
