If it helps, I got a new iPad, I just set it up, installed Logos, signed in, got it set up with the resources I wanted downloaded, and then went into my account on the web and deleted the old device. All worked fine without a hitch. I went from iPad 3 to iPad Air, so sweet...
I'm still not sure of the question. If you get a new device, install Logos, enter your credentials and enjoy! Is that what you wanted to know?

I'm not sure I understand your question. Do you mean delete an App? An iOS profile for an iPad within L5? If you delete an app, ALL data will be lost from the device. Anything backed up to the cloud can be redownloaded. If you changed your email address with logos, but it's still the same account, everything will work as normal. I'm not sure if I answered your question. If not, please clarify.
