When I Highlight on my iPad, It Defaults to a Particular Recent Style...How do I Change It?
I can't remember how to change my default highlight style on my iPad.

go to the settings tab and you will find documents for highlights. Click it and you will find the option you need.

I don't see any tabs, much less a 'settings' tab.
Do you mean the Tools 'gear' on the sidebar?

On my iPad it is called tools.
on my phone it is called settings.
both are 4.4.2 of the app (bible)

OK, I found it. The correct (i.e., the one I want) Notes file is checked.
But when I highlight in my Bible, a different type of highlighting shows up.
NB: I created a special Notes file on my desktop called, "iPad Notes/Highlights". This is so I can gather all my highlighting on the iPad in one place and then change it to fit my more complex desktop scheme. I have this one checked on the iPad, but a different Notes file ('Key Verses') is what the thing uses when I highlight.

I don't believe you can. You can change the behavior and location of where notes are stored, but the app will remember the last used highlighting style and use that. To change back after having used another style, highlight something and then change the style to what you want. Going forward, new highlights should use that style (until you change it again).
If you don't like this behavior, you can go back to the "old" behavior where you choose the style every time... but that adds an extra step (or more!) for most users.

I don't fully follow you here... FYI - I have my app set up to use the "most recent" note file. This method is great for users who primarily stick to a single resource or topic. For example: I create "resource specific" note files. I use the mobile app to read through various resources. I am NOT jumping around in 10 different resources at once. With my method, I only have to worry about changing the note document when I switch to a new resource.
This method could also be good for a user who wants a topical or sermon specific folder, provided that they are sticking to one topic or sermon at a time. For example: If someone is researching for next week's sermon, they could have a note document created specifically for that sermon. As long as they were only making notes & highlights related to that sermon, they could jump around from resource to resource without worrying about which note folder they were using.

To change back after having used another style, highlight something and then change the style to what you want.
Did that. And again. And just now, again. It won't change to the checked style, and goes back to the other.
I can change to any number of OTHER styles in the list, but not the one I want.

What behavior do you have set up for where notes are stored? What is the style?
I'm not sure I know how to answer. Without any manuals/documentation, I have to search and find a tip, implement it, and then hope my aged brain can remember what I did later. I usually don't.
If you can tell me where to take some screen shots, I'll post them.

- Palette-specific Note Document (default behavior)
- Most Recent Note Document (my choice... I call it "sticky")
- Or select a Note file to default to.
There's a pretty good football game on right now, I hear.
I am half heartedly watching. My team aint in... I do, however, feel better about last week's loss with the way the game is currently going.

As of today (as far as I've noticed, maybe earlier..) the most recent note document choice makes it default to a particular note, not the last note used. Any idea why it's doing that?

I know of one user experiencing this (he is on beta), but I haven't heard of other users with this issue. You should create a new thread, explain the issue clearly, and provide appropriate details. It would be good to prefix your subject line with BUG:

A case has already been written up for this.
As a workaround to the issue, create at least one note with some note content using the preferred Note Document (A) you wish to use. Every highlight after that will use the same Note Document (A) unless you create another note (with content) and use a different Note Document (B). If you do that, then every subsequent highlight with be saved in Note Document (B).
