If you'd like to expand outside of Koine Greek into Attic, these texts by Xenophon (Anabasis, Education of Cyrus, Hellenika, etc.) are very readable and interesting. Highly recommended for both language learners and history buffs.

Truth. I went to a public liberal arts university and for my classical Greek coursework we translated passages from the Hellenika the Anabasis. Xenophon's style is very readable and would make for an easy bridge from Koine to Attic. (Unlike the philosophical writings of Plato and, much as I enjoy the poetic and the adventure, the Argonautika.)
For the reason Greg talks about, I've been pulling for this set for a long, long time; pretty much since they were written. [:)]
Unfortunately, not many Loeb sets are close other than Xenophon.

Indeed, a fact that gladdens my Greekish heart. I wish now that I had bid on the Goodwin grammars when they were in CP.
I already have almost all of these titles through the Perseus Classics Collection. What's the difference between Perseus and Loeb?

The main differences seem to be (a) tagging quality (the extent of that difference is a subject of some debate, but I have not seen anyone look into specifics on this, yet), (b) typesetting, and (c) the Loeb introductory material.
