I noticed I could do this in the stable version, but I seem to have lost the option on the beta version (7.1 Beta 4). Is it certain media images that make this possible or not?
You should be able to do that. Here is what I see:

@Mike Binks - saw your email, but for some reason I'm not seeing your question on the forum here.
Scrolling to the bottom of the passage doesn't change anything - See pic. I intentionally chose a passage that would have to cross multiple slides to test this out (long passages are a pain to insert into powerpoint manually )

You can only do this on certain slides (those designed for Bible Quotes or quotes from any author). Filter media by "Reference" (under Purpose) to see the former, or "Generic Quote" (under Tags) to see the latter.

Whilst what I said was true for the Media tool, it doesn't work like that in the Sermon Editor, which was the point of the original question. That's either a bug or a missing feature in Sermon Editor.
