Is there a way to view notes documents with full quotations as in the desktop version?

I'm not quite sure what you mean, can you be more specific?
The desktop app has a "quotes" view within a note document, but that isn't available in the same way on mobile.
There is a "highlights" view of each resource. Click "more," then "highlights."

To answer Op's question the mobile apps support Full and Compact views, but not Split and Quotes views.
Thanks. May I request the Quotes view as a feature for the iPad? Very handy on the desktop for reviewing all the notes (inc highlighted quotes) I've taken on a subject.
